Exotic Fudge Recipes

Join me in making fudge the old-fashioned way. These easy fudge recipes use traditional ingredients like milk, butter, and sugar (NOT marshmallow cream!). Every fudge recipe on this site has been personally tried to ensure that soft, creamy, delicious fudge can result.

English Scone Recipes

Carrot Cake Fudge easy         medium        hard

Carrot cake fudge recipe

3 cups sugar
1 cup milk
1/4 cup half-and-half cream (10% milk fat)
1/4 cup light corn syrup
2 tbsp butter
1 125ml jar of carrot baby food
1 tsp cinnamon

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, milk, cream, corn syrup, baby food, cinnamon and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Stir only a few times to keep the cinnamon from sticking to the bottom. Remove from heat. Do not stir.

Cool to 120F. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Cookie Dough Fudge easy         medium        hard

Cookie dough fudge recipe

3 cups sugar
1 1/4 cups milk
1/4 cup light corn syrup
2 tbsp butter
2 tsp vanilla
3/4 cup of diced cookie dough (1/4 inch cubes)

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, milk, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.

Cool to 120F. Add vanilla and cookie dough. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Custard Fudge easy         medium        hard

Custard fudge recipe

3 cups sugar
1 1/4 cups milk
1/4 cup light corn syrup
2 tbsp butter
3 tbsp custard powder (Bird's brand is best)

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, milk, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.

Cool to 120F. While the mixture is cooling, mix the custard powder in a cup with just enough water to dissolve the powder. When cooled to 120F, add the custard. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Dark Chocolate Coffee Bean Fudge easy         medium        hard

Dark chocolate coffee bean fudge recipe

4 1-ounce squares dark chocolate
3 cups sugar
2 tbsp corn syrup
1 1/4 cups milk
4 tbsp butter
1 tsp vanilla
1/3 cup whole coffee beans

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

Melt chocolate in pan over very low heat. Stir in sugar, corn syrup, and milk. Increase heat to medium and cook, stirring until sugar dissolves. Wash crystals from side of pan. Cook to 238F on candy thermometer (soft ball stage). Remove from heat, and without stirring, add butter.

Cool to 120F. Add vanilla and coffee beans and beat until mixture begins to thicken. Pour mixture into the pan and cut into squares when cool (room temperature).

Dark Chocolate Jalapeno Fudge easy         medium        hard

4 1-ounce squares dark chocolate
3 cups sugar
2 tbsp corn syrup
1 1/4 cups milk
4 tbsp butter
1 tsp vanilla
8-16 finely chopped pickled jalapeno pepper rings

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

Melt chocolate in pan over very low heat. Stir in sugar, corn syrup, and milk. Increase heat to medium and cook, stirring until sugar dissolves. Wash crystals from side of pan. Cook to 238F on candy thermometer (soft ball stage). Remove from heat, and without stirring, add butter.

Cool to 120F. Add vanilla and jalapenos and beat until mixture begins to thicken. Pour mixture into the pan and cut into squares when cool (room temperature).

Eggnog Fudge easy         medium        hard

Eggnog fudge recipe

3 cups sugar
1 1/4 cups eggnog
1/4 cup light corn syrup
2 tbsp butter
1/4 tsp nutmeg

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, nutmeg, eggnog, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.

Cool to 120F. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Licorice Fudge easy         medium        hard

Licorice fudge recipe

3 cups sugar
1 1/4 cups milk
1/4 cup light corn syrup
2 tbsp butter
4 tsp anise seeds

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, milk, anise seeds, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Stir only a few times to keep the anise seeds from settling to the bottom of the pan. Remove from heat. Do not stir.

Cool to 120F. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Root Beer Fudge easy         medium        hard

Root beer fudge recipe

3 cups sugar
1 1/4 cups milk
1/4 cup light corn syrup
2 tbsp butter
1 1/2 tsp LorAnn root beer flavour

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan.

In a large 3 quart saucepan, combine sugar, milk, corn syrup and butter. Cook over medium heat, stirring until mixture comes to a boil. Cook to 238F on candy thermometer (soft ball stage). Do not stir. Remove from heat. Do not stir.

Cool to 120F. Add root beer flavour. Beat until mixture starts to lose its gloss. Quickly pour into greased pan.

Tomato Ginger Fudge easy         medium        hard

Tomato ginger fudge recipe

3 cups white sugar 
1 cup milk 
3 tablespoons light corn syrup 
1/2 cup tomato paste
1/4 teaspoon salt 
1/2 teaspoon ground ginger
1 1/2 teaspoon vanilla extract 
1/2 cup butter 

Line an 8 inch square pan with foil and spray the foil with cooking spray. Alternatively, butter the pan. Combine sugar, milk, corn syrup, tomato paste, ginger and salt in large 3 quart saucepan. Mix thoroughly. Bring to boil on high heat, stirring constantly. Reduce heat to medium and continue to boil mixture without stirring until it reaches 232F (110C) or until a small amount forms a soft ball in cold water.

Remove from heat and stir in vanilla and butter. Let cool to 110F (45C). Beat the mixture until it becomes very thick and loses some of its gloss. Quickly pour into a buttered 8" square pan.
